Honey Lemon Chicken

This is a fast tasty meal,easily made.Serves 2-4 people...
Depending if you want to share :)

Make sure to have this stuff:
1.5 lbs of potatoes-cut into small wedges
8-9 chicken drumsticks
salt +pepper(as much as you like)
3 lemons
1 fine chopped up garlic clove...
2oz of butter
4 rosemary sprigs-leaves removed from stalks
3-4 teaspoons of honey

Pre-heat oven to 400 degrees
squeeze juice from two of the lemons into a small pan with the butter,rosemary and garlic..season with salt and pepper. Heat it up until butter starts to melt.

Put the chicken in a roasting pan. Place the potatoe pieces around the chicken.

Pour your butterr mix over the chicken and potatoes,make sure to cover everything and turn the potatoes if needed.
Now cut up the remaining lemon into 8 pieces and throw them in there with the potoes and chicken.
Cook the chicken for 1 hour,mixing a few times..until the chicken is cooked and the potatoes are nice and crip and golden colour.
Serve with a green salad if you like.

Easy Chicken Balls

I just made up a fast easy dish of chicken balls.
If you dont want to order chinese you can make your own.

Here's what you need:
2-3 regular size chicken breast
Instant pancake mix(you only need to mix with water)
about 3 -4 cups of oil
Cherry dipping sauce or pinnaple sauce is good too
just some salt and pepper or any spice tht makes you happy :)

First cut up the chicken breast in small sized pieces or cubes ..
dont stress if the cubes are different sized.. just about anything works!

Preheat pan on stove top on medium...
add Chicken cubes....sprinkle your spices to your liing ...mix
Let sit and cook on medium,,stiring occasionaly.
Should be cooked throughout in about 15-20 minutes

Now get a nice size bowl.....
pour some pancake mix into bowl,and add some water and mix until nice and sticky.
you can read the box.or just pour some in and dont worry..it will turn out fine.
If you put to much water...just add some more pancake mix to make it more solid.

Now i use a Wok...but you can also use a big pot. either works..just be safe.
Take what you got...and pour your 3-4 cups of oil (you can use more or less even)
Place on stove top and turn up to Med-High heat

While your oil is heating up..time for some multi tasking!
Take your chicken cubes that re cooed by now and dump half or so in you pancake batter.
get a Big spoon stir it around,make sure the mix covers all the chicken.

One spoonful at a time take your pieces of battered chicken and drop them into the oil.
you can fit many pieces at once in your wok/Pot.

Get a plate and put some paper towel on it..then remove pieces when the batter looks a bit darker..it doesnt take more then 3-4 minutes from when you place them in the oil.

The paper towel is big,,it really helps remove excess oil.


Pour red/pinnaple sauce all over,serve with rice or nothing at all.

lemon Brulee

Here' a recipe for nice dessert,after a great meal.....or anytime for that matter.

ok heres whats ingredients you need:
16 oz cream..baking cream..
80z of Lemon curd -(you can find some in the jams section of grocery store)
5 teaspoons of icing sugar or powdered sugar

First... Use a large bowl,stir with electric mixer until it starts to hold its own shape.Then mix in Lemon curd.

then mix into six 3/12 inch remekins.(small ceramic dish)smooth the tops of them with a spoon
and put them in the fridge for atleast 2hrs,but i suggest you leave them overnight.

Pre-heat oven to broil....pour a thin layer of the icing sugar over each dish..broil for about 2-3 minutes.
Or if you got a blowtorch..you can carefully use it to carmelize the sugar/icing. then serve immediatly.

Sucre a la creme or Cream fudge Recipe

My Girlfriend is whipping up this nice recipe she got from a friend.This treat is really popular in Quebec..that's where it originates from.Those of you with sweet tooths ..this is good stuff, another simple recipe. Try it out.

Here's what you need:
2 cups brown sugar
3/4 of evaporated milk (in a can) or use 15%cream
1/3 cup of butter
1 1/2 cups of icing sugar

mix milk or cream with the brown sugar and butter on the stove in a pot on medium for 8 minutes.
next... remove from heat. add icing sugar..mix with mixer(or fork if you have to) for 10 minutes.

Pour in buttered pan,place in fridge until it gets hard.

Remove from fridge,cut into squares or whatever makes you happy.

Red Pepper Crusted Chicken

first off you need:
4 boneless,skinless chicken breasts
1 red pepper-choped into bits
2 garlic cloves-finely choped
some parsley-about a handfull
2 tablespoons of olive oil

goes good with
either pasta or potatoes with some green salad.

to get things going...

Pre-heat oven to 400 degrees Place the breasts in a roasting tin or dish

now.. chop red pepper and garlic in a grinder or foodprocessor until really chopped- if you only got a knife..thats ok-just chop it up alot-place in bowl- stir in oil with mix. now spread that mix all over the chicken-dont be shy. that will be the crust.
Spoon 2 tablespoons of water into the bottom of the baking dish and roast the chicken-uncovered-30 min.

serve with side dish.

tuna and cheese pasta

ok this is a nice cheap meal

what you need:
some penne past(like 10oz)
12 oz of brocoli tops
8oz of cottage cheese
chives(just cut up a bit and add to mix)
5oz grated cheddar cheese
can of tuna (drained)

3 steps

1. cook pasta in large pot of boiling water for 10 -12 min until tender,adding the brocoli during the last 4minutes of cooking.

2. Drain pasta and brocoli,then place back in pot. stir in cottage cheese and cheddar cheese -it will melt into the pasta.

3. gently mix in tuna-try not to break tuna up so much. add some salt and pepper and serve.

Nanny's Stew with dumplings

Just got off the phone with my grandmother and was aking about her old stew recipe.
Truthfully i dont know much about stews but felt like trying to make one.

Its fairly simple.
heres the stuff you need.

1 lbs of stewing beef
3-4 carrots
4-5 potatoes
1/2 turnip
whole onion(optional)
cabbage(optional)
1 teaspoon salt.

To Start:
Brown the beef before anything else.dont fully cook.

chop up the carrots into average size pieces

cut the potatoes into squares,not too small though.

cut turnip into pieces aswel, not too small though.

i personly dont really like onions,but i would be lying if
i told you it doesnt add great flavour. So i use a whole onion and cut it into 4 pieces,just to add and leave it in for flavour.(you can always then remove it when the stew is done)

cut up the cabbage and add some if u choose.

Use a nice size pot. Cook on medium.
add the brown beef.
add carrots and turnips first.
then add some water.
those take longer to cook the potatoes.
your mix should be in, your pot should be atleast half full of water.
cook for like 15 minutes. stir.
now add chopped up potatoes, onion,and cabbage.
add teaspoon of salt. stir. keep cooking the mix on medium for 1 hr.
u should start seeing the stew becoming a STEW! just keep stiring and checking.
I personaly let it cook for like 2 hrs..slow cooking just brings out more flavour.

Dumplings for stew (optional)
i have to say..ITS ALL ABOUT the DUMPLINGS!
maybe its just me but i love them with the stew..Irish style.

what you need:

1 cup flour
2 tespoons baking powder
3 teasoons of shorting or lard
1 teasoon of parsley(optional)
1/2 salt.
MIX the above all together....
now add 1/2 cup milk.
its will be a really sticky mix you should now have,use a spoon and just scoop up a bit and drop it in the stew that is finishing up. cover stew and let cook for 5minutes,the dumpling will take form on there own in the stew.
