Red Pepper Crusted Chicken

first off you need:
4 boneless,skinless chicken breasts
1 red pepper-choped into bits
2 garlic cloves-finely choped
some parsley-about a handfull
2 tablespoons of olive oil

goes good with
either pasta or potatoes with some green salad.

to get things going...

Pre-heat oven to 400 degrees Place the breasts in a roasting tin or dish

now.. chop red pepper and garlic in a grinder or foodprocessor until really chopped- if you only got a knife..thats ok-just chop it up alot-place in bowl- stir in oil with mix. now spread that mix all over the chicken-dont be shy. that will be the crust.
Spoon 2 tablespoons of water into the bottom of the baking dish and roast the chicken-uncovered-30 min.

serve with side dish.

tuna and cheese pasta

ok this is a nice cheap meal

what you need:
some penne past(like 10oz)
12 oz of brocoli tops
8oz of cottage cheese
chives(just cut up a bit and add to mix)
5oz grated cheddar cheese
can of tuna (drained)

3 steps

1. cook pasta in large pot of boiling water for 10 -12 min until tender, adding the brocoli during the last 4minutes of cooking.

2. Drain pasta and brocoli, then place back in pot. stir in cottage cheese and cheddar cheese -it will melt into the pasta.

3. gently mix in tuna-try not to break tuna up so much. add some salt and pepper and serve.

enjoy.
